Ingredients:
2 chicken leg quarters from The Old Fashioned Farmstead, divided into thighs and drums
1 1/2 cups dry breadcrumbs
2 teaspoons salt
2 teaspoons garlic powder
1 teaspoon onion powder
1-2 teaspoons black pepper
1 teaspoon red pepper flakes (if desired)
2 tablespoons olive oil
Directions:
-Heat oven to 400 F degrees and line a large baking sheet with parchment paper
-In a large plastic bag add the breadcrumbs, salt, garlic powder, onion powder, black pepper, and pepper flakes.
-Seal the bag and shake it well until all the contents are mixed thoroughly. Add the oil to the bag and shake again.
-Add one piece of chicken to the bag and shake it until the chicken is evenly covered with the mixture. Remove the chicken and allow the excess breading to fall back into the bag. Place the chicken skin side up on the parchment paper.
-Repeat the process with the rest of the chicken until all of the pieces are coated.
-Make sure the chicken is spaced evenly on the pan with no pieces touching.
-Bake for 30-45 minutes or until the internal temperature reaches 165 F degrees. The skin should be lightly golden and crispy.
