Prep Time: 10 Cook Time: 50 minutes Servings: 2-4
Ingredients:
2 chicken leg quarters from The Old Fashioned Farmstead divided into thighs and drums
1/4 cup soy sauce
1/3 cup honey
1/4 cup orange juice
1 tablespoon dijon mustard
2 cloves garlic
2 teaspoons grated ginger
scallions for garnish (if desired)
Directions:
-Heat oven to 400 F degrees.
-Wisk together the soy sauce, honey, orange juice, mustard, garlic, and ginger in a medium bowl.
-Add the chicken and let sit for 15 minutes or longer if desired.
-Tranfer the chicken to a oven proof skillet skin side up and make sure that the chicken is spread out.
-Pour the marinade into the skillet.
-Bake for 20 minutes, flip the chicken over and return to the oven for another 20 minutes.
-For a nicely browned skin, flip the chicken once more so that it is skin side up and cook for another 5-7 minutes.
-Let cool for 5 minutes then serve over rice with the extra sauce.
