This lard is made from only the leaf fat of our Berkshire Pigs. The leaf fat is the fat that surrounds the kidneys and loin of the pig. Some consider leaf lard to be the highest grade of lard. It has a high smoke point so it is great for frying and pan searing. It is also prized by bakers for creating flavorful pastry crusts.
